The ingredients needed to make Chilli Chicken:
  1. Get 500 grams Chicken (curry pieces)
  2. Make ready 1 Onion , finely chopped
  3. Make ready 3 Onion , cut in rings
  4. Take 1 Capsicum , large   cubes
  5. Make ready 1 Green Chilli , finely chopped
  6. Make ready 2 - 3 Green Chilli , whole
  7. Take 2 tbsps Garlic Paste
  8. Prepare 10 cloves Garlic , finely chopped - 12
  9. Take 1/2 tsp Ginger , finely chopped
  10. Prepare 1.5 tsps Green Chilli Sauce (optional)
  11. Prepare 1 tbsp Vinegar
  12. Prepare 4 tbsps Soya Sauce
  13. Make ready 1 tbsps cornflour
  14. Prepare 1/4 cup White Oil
  15. Make ready 1/3 cup Water
  16. Take to taste Salt

Though mainly boneless chicken is used in this dish, some people also use bone-in chicken too. Instructions to make Chilli Chicken:
  1. 2-3 hours before you plan to start cooking, marinate the chicken with 2 tbsp of soya sauce and 1 tsp of salt. Let the chicken rest at room temperature.
  2. After 2-3 hours, heat a few tbsp of oil in a wok. Add in the capsicum pieces, and lightly saute. Remove, and keep aside.
  3. To the remaining oil, add the finely chopped onion, ginger, garlic, and green chilli. Saute on medium heat.
  4. Now add the ginger and garlic pastes. Stir for 2-3 mins.
  5. Finely add in the marinated chicken pieces to the wok. Mix well.
  6. Pour in the green chilli sauce, if using.
  7. Fry the chicken pieces till they slightly brown. This should take about 7-8 mins.
  8. Finally pour in the water. Add salt. Let the gravy simmer for 8-10mins.
  9. Once the chicken is almost done, add the vinegar and 1 tbsp soya sauce.
  10. In a separate bowl, mix the cornflour in 3-4 tbsp of water.
  11. Pour this into the gravy.
  12. Add in the capsicum.
  13. Now cook everything for 1-2 mins. The gravy will thicken.
  14. Your dish is now 90% done!
  15. Just before serving, in a frying pan, add oil and fry the onion rings and the whole green chillies.
  16. Add 1 tbsp of soya sauce and a bit of salt to enhance the colour and taste.
  17. Now add all this to the wok.
  18. Turn the stove on. Mix the gravy till everything becomes well incorporated.
  19. Your delicious chilli chicken is now ready! Enjoy!!
