I use a pressure cooker which saves a lot of time as having a corporate job doesn't leave you much time for anything fancy. So, I always try cooking simple and quick recipes. Add the cooked bamboo shoot, water or pork stock, padaek and fish sauce and bring to just below the boil, without stirring (see Note). Stir-fry for a minute and then add the bamboo shoots.
Steps to make Bambooshoot Stew:
- Rinse the bambooshoot, boil, and drain until the its odourless. While, make the coconut milk.
- Prepare all the ingredients.
- Boil a cook pot of water, put the coconut milk in. While, grind all the ingredients except bambooshoot, green chili and the long beans.
- Heat a pan, fry the ingredient paste until it's fragrant. While, put the green chili, sliced bambooshot, and cut long beans into the coconut based soup.
- When the ingredient paste cooked, bring into the soup, stir well, and bring it to boil in a low heat. Let it cool, wait for about minimum 2 hours to make it taste wonderful.
- PS: It will taste better when it stays overnight on the pot. The resting process will bring up the flavor.
