The ingredients needed to make Melon stew:
- Take 240 g ground melon (wild melon seeds or pumpkin seeds)
- Make ready 400 ml meat stock
- Prepare 680 g (about 5 medium tomatoes)
- Get 3 fresh chili pepper
- Prepare 4 tbs ground crayfish
- Make ready 10 g chicken bouillon
- Prepare 1/2 tsp salt
- Prepare Handful dried bitter leaves (or spinach finely chopped)
- Get 4 tbsp olive oil
- Prepare 500 ml water
- Prepare Millet flour or cornmeal (for serving)
Pour blended mixture into the stew. DO NOT STIR, cover and reduce heat to low. Mix ground melon with water, some Salt, pour into a pot of hot oil and fry till lumps are formed. Empty the fried lumpy melon into the pot of soup and continue cooking.
Steps to make Melon stew:
- Pause the tomatoes and pepper in a blender until purée. Transfer to a pot on a stove top, cover and allow to cook until the water content is dried off.
- Heat up a pot, add oil,the cooked tomatoes and pepper mixture. Fry for about 5 minutes, add melon and continue frying for another 5 minutes, then add the crayfish and fry for 2 minutes.
- Add meat stock, water, chicken bouillon, 1/2 tsp salt, stir to combine and bring to a boil.
- Reduce heat to low and allow to simmer for 30minutes. Stir in dried bitter leaves (washed and cut into smaller sizes), cover and allow to simmer for additional 5 minutes. Serve with cornmeal or any choice of carb. Voila!
