Add Israeli couscous to saucepan and stir to coat in oil. If you are serving warm salad this over a bed of greens, dress the salad greens with about ¼ cup of dressing and place on salad plates. To make the best, most flavorful salad, add the vinaigrette to the couscous while it is still warm. We do the same with pasta salad and even potato salad.

Instructions to make Warm Couscous Salad:
  1. Heat some oil in a skillet over high heat. Add cubed eggplant. When nicely browned, turn down the heat
  2. Continue frying the eggplant until soft, add minced garlic. When fragrant, add boiling water and couscous. Take off heat and cover with a lid
  3. After 10 min, fluff the couscous with a fork, then add chopped olives, cubed tomatoes, rosemary, salt and paprika
